You should be impressed that some of the port actually made it into the cabbage before I could drink it all!!!! 10/10 but I had to drain off some excess liquid.

    Stuffed Mushrooms with Pâté

    Mum found this recipe in a Woman's magazine when living in Clifton Avenue and tried it on me when I was over from Germany with baby William. I then cooked it for her a few times in Hillside Drive when she could still have a wide diet. We had this as a starter one Xmas and she added a dash of sherry in the pâté filling.

    Ingredients - large mushrooms. Large tablespoon of tiny chopped onion. Mixed herbs. Tub of Brussels pate. Breadcrumbs and cheese (Parmesan is best but she used cheddar).

    Method - peel mushrooms and finely chop the stems. Pop onion with blob of better into microwave for 90 secs. Add chopped stalks (I also add a blob of garlic here) and mixed herbs. Pop in microwave for 90 secs. Drain any liquid from onion mix and add the pate - 2 large tablespoons per mushroom. Mix and beat together thoroughly. Put bit of salt on each mushroom and spread the filling over. In a separate bowl mix breadcrumbs and finely grated cheese. Herbs too if you want. Sprinkle over the stuffed mushrooms and bake in oven 220 for 15 mins.
